Chicken Tikka and Couscous Salad with Green Chutney Dressing

This was a quick dinner I whipped up with some leftover Chicken Tikka with some Couscous and veggies on a busy weekday. Very filling, healthy and quick dinner idea that you can make with any left over chicken that is grilled, baked or fried. Couscous is a tiny pasta and it takes few minutes to get done- you just need to soak them in hot water and let stand still for 5 minutes. Choose whole wheat couscous for healthy option. I dressed this salad with Indian green chutney dressing and the result was total lip smaker!! Do try!!

Chicken Tikka and Couscous Salad with Green Chutney Dressing

Servings:3

Ingredients:

Couscous: 1.5 cup, cooked (Or use  cooked broken wheat /dalia)

Cooked Chicken Tikka: 4-5 pieces, shredded thickly (Or any grilled chicken)

Purple Cabbage: 1 cup, shredded finely

Carrots: 1/2 cup, shredded finely

Onions: 1/2 cup, sliced 

Tomatoes: 1/2 cup, sliced

Lettuce: a few, torn roughly

Dressings:

Green Chutney: 1 tbsp (See Note for Green Chutney)

Olive Oil: 3 tbsp

Salt: As required

Chaat Masala: 1 tsp

Roasted Cumin: 1/2 tsp, crushed

Mint Leaves: a few

Lemon Juice: 1/2 tsp

Procedure:

  1. Combine all the ingredients for dressing and mix well to emulsify and set aside.
  2. Combine all the ingredients for salad with couscous and when ready to serve toss the dressing.
  3. Serve immediately.

Notes:

  1. To make green chutney, combine 1 cup of fresh cilantro with 1/4 cup of mint leaves, 1 green chili, juice of one lemon, 1/2 tsp of roasted cumin and a teaspoon of salt in blender and blend to fine paste.
  2. It can be stored for a month in refrigerator in airtight container.
